Apricot Mustard Glazed Leg Of Lamb Recipe
Ingredients:
1/4 c of apricot-flavored jam
Pepper
2 Tbsps of oil (olive)
2 cloves garlic; chopped
3 pounds butterflied legs of lambs
1 c of beef broth
2 Tbsps of soysauce
2 Tbsps of honey-flavored mustard
1 tsp of dry rosemary
1/2 c or red-wine
Salt
Instructions:
You combine the mustard, jam, soysauce, oil, rosemary and garlic. Reserve two tablespoons of the marinade. Brush the remaining sauce over the lamb. Have it seasoned w/ pepper and salt then marinate it for about 30 mins.
Broil the lamb meat for about 20 mins on each side. Bake it at 425 degrees F w/ fat-side-up for about 20 mins or ’til pink. You remove it from your oven & allow to rest in serving platter for about 10 mins. Drain excess oil from pan.
Pour wine into pan & cook ’til it is reduced into 1 Tbsp. Add reserved part of your marinade, broth & lamb drippings. Boil for about 20 mins.
Slice the lamb thinly against its grain. Then serve w/ sauce evenly poured throughout the meat
