Arni Exohiko “Surprise” Lamb Country Style Recipe

Ingredients:

2 Tbsps of oil (olive)
18 individual sheets of phyllo (commercial)
2 c of drained & cooked peas
16 tomatoes (cherry); peeled
Salt
Pepper (ground)
A pinch of dry oregano
8 loin lamb-chops
6 Tbsps of hot & melted butter
16 parboiled potato-balls
1/2 pound of cheese (Kasseri)
3/4 c of chopped parsley

Ingredients:

In thick skillet, you heat your oil then fry lamb at high fire, turn frequently. Adjust heat & simmer it for about 15 mins and then the remove pan from heat.
Unroll your sheets of filo then you cover w/ dampened towel. Place a small-sized fry-pan over low-heat then heat your butter. Remove 2 filo pieces/heets then coat it w/ heated butter use the 2nd sheet to cover then brush again w/ butter.

Then, in center part of buttered filo, you place a lamb-chop, 2 Tbsps of peas, kasseri slice, 2 balls of potato, 2 tomatoes. Sprinkle it w/ pepper & salt & 1 Tbsp parsley & oregano.
Have filo folded around lamb & veggies, resembling a parcel that is sealed. Arrange w/ seam-side-down in greased bake pan then set it aside. Perform the same process to create eight parcels.

Brush generously w/ heated butter then have it baked for 45-50 mins at 350 degrees F ’til golden.
Remove them from your oven then arrange neatly in heated platter. Best when served warm / raw veggie salad.
