Arni Fricasse (Lamb Fricasse) Recipe
Ingredients:
1 onion (large); chopped
1 kilogram of lean lamb (boneless); cubed
2 Tbsps of parsley; chopped
Salt
Pepper
2 Tbsps of butter
1 c of heated water
1 tsp of chopped fennel
1 & 12 c of stock
3 spearated eggs
White-pepper (ground)
1 Tbsp of cornflour
Lemon from 1 juice
8-12 artichoke hearts (small)
Instructions:
In thick saucepan, fry the onions in butter ’til transparent. Then increase the heat then add the lamb meat that is cubed.. Constantly stir while cooking ’til juice of meat evaporates.
Reduce the heat & then add heated water, pepper, salt & herbs. Have it covered & gently simmered for about 1 – 1 & 1/2 hrs. Add the artichokesthen continue cooking ’til lambs turn tender.
Drain the liquid carefully from the pan ito jar to creat 1 & 1/2 c w/ hot stock, thn keep heated.
Bring your stock into boil. You mix the conflour into paste w/ some iced water & theb tou add it to the stock, stir ’til bubbly and thickened. Boil about a minute.
Beat eggwhites ’til stiff. You add the juice in gradually then constantly beat. Pour the boiled & thick stock, constantly beat. Gradually add the juice then beat thoroughly.
Retuirn your sauce inpan & cook your eggs. Avoid letting sauce boil.
Pour the lemon-sauce & egg all over the veggies & lamb. Dust w/ herbs that were chopped.
