Arni Souvlaki (Skewered Lamb) Recipe
Ingredients:
1 boned leg of lamb (2 kilos)
1/2 c dried wine (white)
2 tsps of dry oregano
3 bayleaves, broken into pieces
Pepper
Salt
1/2 c of oil (olive)
Juice from a lemon
2 cloves garlic; crushed
Salt
Instructions:
Cut the lamb meat into 1 & 1/2 -inch cubes then place them in glass dish. You add the rest of the ingredients it into lamb then mix thoroughly to evenly coat the meat then cover.
Place it in your fridge and marinate it for half or whole day, stir occasionally. You remove lamb from the marinade then thread into metal-skewers. Place bayleaves between meat cubes.
Have it cooked under hot coals, run & bast frequently w/ marinade. You grill it for about 15 mins ’til cooked. Place them in serving platters & garnish w/ lemon cuts and parsley.
