Baked Lamb & Wheat Recipe
Ingredients:
1 pound of bulgur; crushed finely
2 pounds of ground lean-lamb
1/4 tsp of cinnamon
2 & 1/2 tsps of salt
1/3 c of onion; grated
1/2 tsp of blackpepper
Water
2/3 c of onion; chopped
1/2 pound of ground lean-lamb
1 Tbsp of shortening plus 4 tsps
1/4 c of nuts (pine)
Instructions:
Cover bulgur w/ water then soak it for about 30 mins. Add 2 lbs lamb, 2 tsps salt, onion, 1/2 tsp blackpepper & cinnamon. Knead very well.
For the filling: You saute 2/3 c of onions in shortening ’til brown. You add 1/2 lb of lamb, nuts, pepper & salt. Cook & stir ’til meat becomes brown.
Spread one-half of bulgur-lamb mix in greased 9×12-inch bake pan. Have it covered w filling. Top w/ the other half of bulgur-lamb mix. Press firmly.
Using a sharp-edged knife, slice diagonal cuts across in order to have diamond shape marks. Dot the top w/ 2 Tbsps shortening.
Have it baked at preheated oven (400 degrees F) for about 30 mins. Adjust to 300-degrees F then bake for another 30 mins.
