Basque Lamb Chops With Tomatoes & Olives Recipe
Ingredients:
6 lamb meat chops
Salt
Pepper
1/3 c of dry wine (white)
1/2 c of seeded olives (Spanish); sliced
Flour
2 Tbsps of Spanish olive-oil
1 pound of peeled vine-riped tomatoes; seeded & chopped
Instructions:
Season the chop w/ pepper & salt. Dredge them into flour. Have oil heated in thick skillet ’til light-haze forms. You add the chops then cook them for 2-6 mins on every side.
Once cooked, transfer them into hot platters. Pour the wine quickly into medium skillet & scrape the browned bits. Add the olives & tomatoes. Cook mixture over mid-heat for 4-5 mins. Season w/ pepper & salt then spoon it over the chops.
