Caraway Lamb Hotpot Recipe
Ingredients:
1 & 1/2 kilograms of mutton
4 Tbsps of flour w/ pepper & salt
2 & 1/2 c of warmed beef broth
1 tsp of caraway seeds in muslin-bag
1 & 1/2 Tbsps of butter
3 peeled onions (large); thickly sliced
1 bacon slice
2 tsps of melted butter
Instructions:
Have the meat & onions sauteed in melted butter. Arrange alternately meat & onion layers in baking dish, ending w/ meat layer. Brush w/ melted butter then top w/ chopped slice of bacon.
Put one bag of seeds all over top. You pour the stock over then have dish covered. Place inside mid-heat oven and cook for 1 & 1/2 hrs or ’til meat becomes tender.
Cover during the remaining 20 mins of cooking. Remove the seeds before you serve the dish.
