Lamb Chops With Red Pepper Pesto Recipe
Ingredients:
2 redpeppers (sweet)
Olive-oil
2 centiliters of grated Parmesan
Pepper
Salt
8 chops of lamb-loin (1/2-inch thick)
1/2 c leaves of basil
2 centiliters of minced garlic
Instructions:
Place the peppers in greased pan placed over mid-heat, frequently turn for 20 mins ’til sides are charred. Cool then peel. Have it cored & seeded.
Puree the peppers in processor ’til smoothened. Add the cheese, oil & basil. Puree ’til blended well. Stir the garlic in then season w/ pepper & salt.
Place meat on oiled pan over mid-heat then cook 5-7 mins in every side or ’til wanted doneness. Best when served w/ redpepper pesto.
