Lemon-Rosemary Shoulder Lamb Chops Recipe
Ingredients:
4 shoulder of lamb chops
1/3 c of fresh juice of lemon
1 Tbsp of freshly chopped rosemary
Salt
Pepper
1 tsp of grated lemon rind
1/4 c of olive-oil
1 clove garlic; minced
Instructions:
Have the chops dried. Slash the edges one time then arrange it in a glass, shallow bake dish. In mixing bowl, you whisk the rind, juice, garlic, oil and rosemary together. Pour the chops over, turn and evenly coat each sides. Have it covered then refrigerate them for a minimum of an hour or ’til 6 hrs.
Set in room temp before cooking. Sprinkle your chops w/ pepper and salt then arrange on greased 4-6″ above mid-hot coals for 5 mins in every side. Turn once then brush w/ marinade oftentimes ’til chops become soft & springy.
