Lamb Curry With Yogurt Recipe
Ingredients:
1 Tbsp of ginger (fresh); chopped finely
2 pcs cloves of garlic; chopped finely
1 pc of onion (large); chopped finely
2 Tbsps of coriander seeds (ground)
2 tsps of turmeric (ground)
1 tsp of cumin seeds (ground)
1 tsp of cinnamon (ground)
1 tsp of mustard seeds (ground)
1 pc of onion (large); sliced
4 c of yogurt (unflavored)
2 lbs of lamb (boneless); cut to cubes
2 Tbsps of butter (clarified)
4 pcs of chile peppers (green); chopped
Salt (to taste)
Instructions:
Place the garlic, finely chopped onion, ginger, yogurt, and chiles inside the processor; process till mixed well. Spoon the mixture onto the lamb; toss to even out the coating. Cover then place inside the refrigerator, about 3 hrs.
Saute the onion slices in butter, don’t brown the onion. Add the lamb with its marinade; stir to mix them. Cover then simmer till meat becomes tender, or for 90 mins. Season salt if desired.
