Lamb Cutlets With Mint & Mustard Recipe
Ingredients:
1 pc of lamb rack (6-cutlets); trimmed fat
Juice from 1/2 pc of lemon
2 Tbsps of coarse french mustard (moutard de meaux)
2 Tbsps of mint; chopped finely
Salt & Pepper
Instructions:
Preheat oven at 428 degrees F. Combine salt, pepper, and juice; rub onto rack then liberally spread over the mustard. Place the meat, with is mustard facing up, onto a baking dish. Place inside preheated oven and bake for twenty mins. Take out from oven then cool for a while. Cover then place inside the refrigerator overnight. Press mint onto the (crusty) surface then cut the cutlets.
