Lamb Fillet With Morels Recipe
Ingredients:
For the Chive Cream Sauce:
10 g of shallots; chopped
3/16 c of wine
Drops of wine (white)
150 g of stock (chicken)
120 g of cream
Oil (olive oil)
5 g of chives; chopped
Salt
Sugar
Pepper
For the Potato Pancakes:
100 g pf potato
1 pc of egg
10 g of flour
3/16 c of cream
1/2 pc of egg yolk
Salt & Pepper (for seasoning)
3/16 c of milk
For the Garnishes:
12 pcs of florets (broccoli); blanched and remove the stalks
Salt & Pepper
Stock (chicken)
50 g of tomato; diced
10 g of truffle; chopped
10 g of chives; chopped
Butter
Instructions:
Soak the morels overnight in (cold) water then rinse well and discard the stalks. Cut and discard the stringy parts of the lamb fillets. Season salt & pepper on fillets. String the meat onto the skewers and tear a (central) hole then fill with chicken forcemeat.
(Port Wine Sauce)
Make the (beef) stock or make the powdered gravy to get a 1/3-cup of thick gravy. Pour over wine then maintain its consistency thick. Keep it warm.
(Chive Cream Sauce)
Saute the shallots with oil inside a saucepan. Add (Madeira) wine, stock, and (white) wine. Let it boil till thick and add the cream then strain. Add salt, pepper, chives, and sugar. Adjust the taste and keep it warm.
(Pancakes)
Make twelve pieces of golden brown pancakes and keep them warm.
(To cook)
Saute the morels with butter and season (stock, salt, pepper) for 2-3 mins. Saute the blanched florets with butter and season (stock, salt, pepper) for 1-2 mins. Wrap a leaf of the lettuce around the (stuffed) lamb and wrap completely using a sheet (pork) net and enclose the ends by folding.
Pan fry the prepared lamb with butter above gentle heat for 5 mins till slightly brown. Place the cooked lamb on the roasting pan. Roast inside the oven at 250 degrees F with its juice for 20-25 mins, turning frequently.
Once cooked, take out from the oven. Carefully remove pork wrapping. Cut lettuce-wrapped fillets to twelve pieces.
Place a tablespoonful of the chive sauce on the center of individual plates then spoon three portions separately of the port sauce, touching the center sauce. Lay the slices of lamb sideways onto the port sauce.
Place the pancakes between slices of lambs then lay the floret of broccoli per pancake. Garnish with the chive sauce and with tomato dices and morels. Scatter some truffle above the slices of lambs. Sprinkle over chives.
