Lamb Lentil & Rosemary Soup Recipe


Lamb Lentil & Rosemary Soup Recipe

Ingredients:

1 Tbsp of butter
2 Tbsps of oil (olive oil)
3 pcs of garlic cloves; chopped finely
2 pcs of onions (medium); chopped
1 tsp of salt
2 pcs of carrots; diced
1 tsp of pepper (black)
6 c of stock (lamb)
2 c of tomatoes (very ripe, or canned); chopped
1 c of lamb (cooked); cubed
Hot sauce (Tabasco, pepper)
1 pc of lamb bone (from a roast leg)
1 pc of bay leaf

Instructions:

Heat butter and oil inside a (soup) pot above gentle heat then add onions, garlic, carrots, thyme, salt, pepper, and half of rosemary. Let it simmer then add stock, lentils, tomatoes, bone, and bay leaf. Let soup boil then reduce heat; simmer for 40-50 mins, covered partially, till lentils become tender.

Adjust the seasoning. Place (cooked) lamb onto the base of an individual serving bowl. Ladle over soup and garnish remaining rosemary then serve at once with hot sauce.
