Lamb Marinade Recipe
Ingredients:
8 chops of lamb-loin (1 & 1/4-inch thick)
4 shallots; minced
1 tsp of salt
3/4 c of vinegar (balsamic)
1 tsp of dried leaves of thyme
1/2 tsp of pepper (ground)
1/4 pound of unsalted butter; softened
1/3 c of redbell pepper; roasted
1/3 c of drained pimiento
1 tsp of fresh juice of lemon
Instructions:
Trim the chops then place into large-sized ziplock plastic bag. In separate bowl, whisk together vinegar, shallots, thyme, pepper & salt. Shake well to evenly coat meat.
You seal the bag then squeeze out air. Have them marinated in your refrigerator overnight, turn bag many times.
Have it removed from the fridge, drain & reserve the marinade. Have the chops grilled over coals for 5 mins in every side ’til med-rare. Brush once w/ marinade.
You transfer the chops into serving plates then serve it immediately. Dollop compound pimiento-butter in every chop.
Pimiento-butter: Place butter, bellpepper & juice into processor. Pulse ’til pimientos are minced & butter becomes orange-colored. Place it in bowl then chill.
