Lamb & Mushroom Korma Recipe


Lamb & Mushroom Korma Recipe

Ingredients:

3 Tbsps of corn-oil
1 tsp of cumin (ground)
1 peeled ginger-root; chopped
4 crushed pods of cardamom; seeded
1 & 1/2 pound of lean-lamb; sliced into cubes
6 ounces of mushroom buttons; sliced
Salt
Slices of lime
Nan-bread
1 onions (large); chopped coarsely
1 & 1/4 c of yogurt (plain)
1 tsp of coriander (ground)
1 Tbsp juice of lemon
1/2 tsp of turmeric
2 cloves garlic; crushed
Pepper (ground)
Fresh sprigs of cilantro
Saffron-rice

Instructions:

Have oil heated in saucepan. You add the onions & gently fry ’til bit golden. You add the garlic, ginger, cumin, cardamom, turmeric and coriander. Gently fry for 2 mins, stir constantly. You add the meat then fry ’til browned, stir frequently. Add the yogurt in & allow to boil. Cover & gently cook for 45 mins, stir occasionally.

You add the mushrooms in & re-cover. Cook for 15 mins more ’til lamb becomes tender & yogurt gets absorbed. Add the juice, pepper & salt then cook w/o cover for 5 mins. Garnish w/ slices of lime & cilantro if you wish. Best when served hot w/ saffron-rice & nan-bread.
