Lamb Patties With Vegetables Provencal Recipe

Ingredients:

1 lb of ground lamb (raw)
1 pc of egg (large)
2 Tbsps of breadcrumbs
2 pcs of garlic cloves; minced or crushed
1 tsp of rosemary
1-1/4 tsps of salt
1/16 tsp of hot sauce (pepper)
1 Tbsp of oil (olive oil)
1 pc of onion (medium); cut into rings
8 oz of zucchini (fresh); cut into 1/4-inch slices
14-1/2 oz of tomatoes (canned)
16 oz of small whole potatoes (canned); drained

Instructions:

Combine egg, lamb, crumbs, hot sauce, three quarter teaspoon of rosemary, and a teaspoon of salt inside a bowl; mix thoroughly and shape to eight patties. Place oil on a skillet above high or medium-high heat. Once hot, cook the patties for 2 mins on each side till done.

Remove patties from the skillet and add garlic and onion onto the drippings. Cook above medium heat till onion becomes golden; stir occasionally. Add tomatoes and zucchini; stir them well. Season it with the remaining, rosemary and salt. Cover them simmer for 10 mins till zucchini becomes tender.

Add potatoes and stir them well. Place the patties above the vegetables and cover till heated thoroughly. Sprinkle parsley.
