Lamb & Pear Tagine Recipe
Ingredients:
2 peeled onions (large); sliced
1/2 c of almonds; silvered
1 tsp of ginger (ground)
1 tsp of blackpepper
1 kilo of lean-lamb leg; sliced into cubes (4 cm)
1 tsp of cumin
1/2 c of sultanas
1 Tbsp of olive-oil
1 tsp of coriander (ground)
1 tsp of cinnamon
Salt
Water
4 peeled pears; cored and sliced into chunks (4cm)
Instructions:
Have the onions fried gently in saucepan together w/ olive-oil ’til soft. Then you add meat into pan & cook ’til it loses its red color. Add your spices in.
Add enough water to have meat covered then season w/ salt. Cover & gently simmer for 1-2 hrs ’til meat becomes tender.
Add your pears into lamb-meat together w/ almonds & sultanas. Continue cooking for 5 more mins ’til pears become soft. Best when served w/ rice.
