Lamb Ragout Flavored With Pomegranate Juice Recipe
Ingredients:
1 pc of onion (large); chopped
1 Tbsp of oil
1 tsp of turmeric
2 lbs of lean lamb (boneless); cut into 1-oz chunks
Salt
1/2 tsp of pepper (black)
1/2 c of walnuts (ground or pulverized)
1 Tbsp of flour
1 c of juice (pomegranate)
1 tsp of cardamom (ground)
Juice from 1 pc of lemon
Instructions:
Brown lamb, do not use oil, inside a (Dutch) oven. Place oil on a pan above moderate heat; saute onion till brown and transfer onto the (Dutch) oven. Add turmeric, salt, and pepper; stir them for a min. Add flour then stir till absorbed well.
Add walnuts and (pomegranate) juice then cover enough amount of water onto meat. Lower down heat and simmer. Cook, covered, till meat becomes tender, about 60-90 mins. Add cardamom and juice from lemon then adjust taste.
Serve warm.
