Lamb Shank Recipe
Ingredients:
6 pcs of lamb shanks (medium, about 8-oz each)
2 Tbsps of oil (olive oil)
2 tsps of garlic; minced
2 tsps of salt
Pepper (to taste)
1/2 c of water
1/2 tsp of oregano (dried)
1-1/2 c of lentils; rinsed and drained
1 pc of onion (small, stuffed w/ 3 pcs of whole cloves)
1/2 c of celery; chopped
1 pc of bay leaf
3 c of water
6 pcs of lemon slices (thin)
Instructions:
Brown the shanks with oil inside a skillet. Add half cup of water, half teaspoon of the salt, pepper, garlic, and oregano. Cook above gentle heat, covered, for 60 mins or till tender.
Combine three cups of water, lentils, onion, bay leaf, celery, and remaining salt. Let it simmer for 50 to 60 mins, uncovered, till tender. Transfer the mixture onto a greased (baking) dish then top it with the meat and slices of lemon.
Bake for 20 to 25 mins till liquid has absorbed through and the lentils become soft. Discard bay leaf and onion.
