Lamb Shanks & Lentils Recipe
Ingredients:
9 pcs of lamb (shanks)
1 pc of carrot; sliced
2 pcs of leeks (large); chopped
1/2 Tbsp of olive oil
3 pcs of garlic cloves; chopped
1 pcs of celery stalk; sliced
500 g of lentils (brown)
1 Tbsp of oregano (fresh); chopped
Wine (red)
Salt & Pepper (to taste)
2 pcs of bacon (rashers); chopped
Instructions:
Brown lamb in small amount of oil. Transfer onto a (large) pan. Fry (using same oil) bacon, leeks, and garlic till leeks become tender; add onto the pan. Add lentils, carrot, celery, and oregano then cover mixture with water and wine. Cook gently for 2 hrs or till shanks become very soft, adding liquid as necessary to keep from drying.
Taste then season. Serve hot with parsley.
