Lamb Souvlaki Recipe
Ingredients:
1 pc of lamb leg; boned and cubed to walnut-size
5 pcs of sweet (baby lamb); cubed to walnut-size
4 pcs of kidneys (baby lamb); cubed to walnut-size
1/4 c of oil (olive oil)
1/4 c of wine
Lemon juice (freshly squeezed)
1/4 tsp of thyme (dried)
1/4 tsp of oregano (dried)
1/4 tsp of rosemary (dried)
1 pc of crushed bay leaf
2 pcs of garlic cloves; minced or crushed
Pepper (black, freshly ground)
Salt
Oregano
Lemon(s); quartered
8 pcs of cut bay leaves
Optional:
Tomatoes (firm)
Peppers (green); cubed
Instructions:
Place all lamb meat inside a (non-aluminum) bowl. Combine oil, juice from lemon, wine, pepper, herbs, and garlic; mix thoroughly. Pour the marinade onto meat. Refrigerate for 3 hrs or overnight.
Thread meat onto skewers, adding green peppers and cherry tomatoes alternately. Grill or broil six inches away from heat and brush them with its marinade; turn occasionally. Season salt & pepper.
Remove meat and vegetables from skewers onto a heated serving platter then crush the oregano on top. Serve at once with quartered lemons.
