Lamb Steamed In Rice Powder Recipe
Ingredients:
1-3/4 lbs of lamb (boneless)
2 tsps of soy sauce (dark)
1 Tbsp of soy sauce (light)
1/2 tsp of sugar (refined)
1/8 tsp of salt
5 pcs of ginger slices
1 Tbsp of ginger juice
1 c of uncooked rice (long grain)
2 pcs of dried peppers (hot, small); ground
2 pcs of scallions; halved & crushed
4 pcs cloves of garli; crushed or minced
2 pcs of star anise
Banana leaves (fresh, optional)
Instructions:
Cut meat to butterfly slices then pound lightly. Combine soy sauce, sugar, salt, ginger, (ginger) juice, scallions, ground peppers, and garlic. Toss liquid with meat and marinate, about half an hour.
Place (star) anise and rice onto a skillet. Cook till rice becomes brown and not burnt. Transfer onto a processor and process till it becomes fine like a sand, and not powder.
Line (banana) leaves onto 2 sections of steamer. Place half of the powdered rice onto a shallow bowl and save the remaining inside an airtight container. Dredge meat onto powder and coat well. Arrange onto (banana) leaves then steam for twenty mins.
Sprinkle small amount of water on them 15 mins before steaming is done. Serve inside steamer.
