Lamb Tartare Recipe
Ingredients:
18 oz of lamb (well-trimmed from loin chop)
12 tsps of wheat (medium good); cracked
1/4 c of onion (green); minced
1/4 c of parsley (fresh); minced
2 Tbsps of basil (fresh); minced
1 Tbsp of oregano (fresh); minced
1 Tbsp of marjoram (fresh); minced
1/4 tsp of pepper (freshly ground)
1/2 tsp of salt
1/8 tsp of pepper flakes (red)
12 tsps of water
For the Garnish:
Cherry tomatoes
Cucumber slices
Lemon slices
Basil sprigs (fresh)
Instructions:
Cut the lamb to 1 inch cubes; grind inside the processor till its consistency is like the hamburger. Transfer on a bowl then sprinkle (2 teaspoons) water and (2 teaspoons) wheat. Knead thoroughly then repeat the process five times. Add onion, basil, parsley, marjoram, oregano, pepper flakes, salt, and pepper on the final addition.
Prepare a bowl, w/ round bottom, and line with a plastic. Place lamb inside and smooth the top. Refrigerate, tightly covered, for three hours. Unmold the lamb onto the platter then sprinkle scallions and (fresh) herbs. Surround it with cucumber slices, lemon slices, and tomatoes. Garnish basil and serve it with the garlic toasts.
