Lamb W/ Yoghurt- Coconut Milk & Almond Masala Recipe
Ingredients:
2 tsps of salt
2 c of yoghurt (unflavored)
2 tsps of caraway seeds
1 tsp of saffron threads
1/4 c of ghee or melted butter
4 pcs of cinnamon stick
1/2 tsp of cardamom (seeds)
6 pcs of cloves (whole)
2 c of onions; chopped
3 pcs of garlic cloves; chopped
1/2 tsp of red pepper (chili, ground)
2 c of coconut milk
2 tsps of ginger (fresh); chopped
3/4 c of water (boiling)
1/2 c of water (cold)
1/2 c of almonds (unsalted)
2 lbs of lamb
Instructions:
Place saffron onto a (small) bowl; add a third of (boiling) water then soak it for ten mins. Transfer onto a (deep) bowl. Add yoghurt, salt, and caraway (seeds); stir thoroughly. Add lamb then turn till all are coated evenly. Marinate for half an hour.
Combine remaining (boiling) water and almonds inside a (small) bowl then soak them for ten mins. Transfer onto the blender; blend till smooth and pasty. Set on the side. Heat ghee above medium heat. Add cinnamon, cloves, and cardamom; stir them for one min. Add garlic, ginger, and onions; fry them for 7-8 mins, while stirring constantly, till onions become golden and soft.
Take out lamb on its marinade and add onto the pan. Stir above medium heat till evenly browned. Add (cold) water and marinade; stir thoroughly. Add chili and pureed almond; cook them for ten mins while occasionally stirring.
Add coconut milk and let it boil. Simmer, covered partially, for twenty mins or till lamb becomes tender. Discard cloves and cinnamon then mound lamb decoratively onto a hot platter. Pour over its sauce.
