Leg Of Lamb Nicoise Recipe
Ingredients:
3 pounds of lamb leg
Pepper
1/2 tsp of thyme
1/3 c of packed leaves parsley
1/2 tsp of marjoram
2 Tbsps of red-wine vinegar
Salt
4 cloves garlic
2 Tbsps of anchovy-paste
1/2 tsp of dry rosemary
1/2 tsp of oregano
1/4 c of olive-oil
Instructions:
Pat the leg dry then slash slighlty in many points for legs to lie flatly as possible. Sprinkle w/ pepper & salt. Set it aside. You mince the parsley & garlic on processor. Add the vinegar, marjoram, thyme, pepper, oregano, rosemary and anchovy-paste. Slowly ad the oil into feed opening while processing.
Spread the mixture over the lamb. Place into glass shallow-bake dish. Cover & marinate it in your fridge overnight. Three minutes prior to serving, remove from your fridge. Neatly place the leg w/ meaty-side-up in broiler-pan’s rack. Boril it for 12 mins then turn the leg & broil 8-12 mins on opposite side ’til it reaches 140 degrees F.
Transfer into chopping board then loosen the cover w/ foil then stand about 10 mins before you carve.
