Mid Eastern Lamb Stew Recipe
Ingredients:
3 pounds shoulder of lamb (boneless)
2 onions; chopped
1 can of whole tomatoes (28 ounces)
1/2 c of chicken broth
1 tsp of allspice
1 tsp of turmeric
1 tsp of cinnamon
Pepper
Salt
1 c of raisins
1 Tbsp of sugar
2 c of mushrooms; sliced
3 garlic cloves; chopped
2 Tbsps of olive oil
Ingredients:
Remove excess lamb fats. Cut the meat evenly into 1-inch cubes. Cook the lamb slowly in heated oil for 5 mins or ’til browned. Add the garlic and onions in. Cover & cook for 3-5 mins ’til onions become soft. Add remaining ingredients excluding parsley, pepper, salt and raisins.
Boil and then adjust heat. Simmer w/ cover for 40 mins or ’til meat is tender. You add the raisins the simmer 10 to 20 mins more. Season w/ pepper & salt then add parsley just prior to serving.
