Moroccan Cammama (Spiced Lamb With Onions) Recipe

Ingredients:

3 Tbsps of olive oil
1 chopped onion (large)
1/4 tsp of ground ginger
2 & 1/2 pounds of lamb’s shoulder (boneless); trimmed
1 tsp of ground cinnamon
1/2 tsp of toasted cumin seed
1 tsp of dried chillies (red); crushed
A pinch of crumbled saffron
2 garlic cloves; minced
Pepper
Salt
1/4 c of fresh cilantro; chopped
2 strips of orange zest
3 small lemons
2 Tbsps of honey
Chicken stock
Fresh cilantro sprigs
6 yellow onions (large); halved & sliced

Instructions:

Cut meat into inch-sized pieces. Have oil heated in large pan placed over mid-heat. Add meat & onions then saute fir 5 mins, stir frequently. Then add ginger, cinnamon, saffron, cumin, garlic, chilies, cilantro, garlic, pepper, salt, zest, juice, honey & enough amount of chicken stock to have ingredients covered. Simmer slowly, covered for 2 hrs , stir occasionally.

You add onions & stir very well. Have it simmered for 20 mins ’til onions become tender. Transfer into large-sized bowl. Then raise to high-heat then let fluid reduced by one-half. Add remaining lemon juice, stir it well. You return the ingredients, stir ’til blended. Season as necessary. Transfer into preheated (425 F) oven without cover.

Once top is glazed slightly, remove from oven then serve at once. Garbish w/ few cilantro drops w/ rice.
