Moroccan Lamb Recipe
Meshoui (Moroccan Lamb) Recipe
Ingredients:
1 onion (medium)
1 celery ribs
1 Tbsp of paprika
4 pounds of lamb legs
1 Tbsp of black-pepper
2 large tomatoes
2 qts of water
1 small carrot
A bunch of parsley (fresh)
1 Tbsp of salt
2 Tbsps of garlic (chopped)
2 Tbsps of tomato paste
Instructions:
Prepare the oven. Heat it to three hundred fifty degrees Fahrenheit. Have vegetables chopped coarsely. Rub salt, paprika, garlic & pepper over the lamb, then set them aside. Nestle the lamb in roast pan’s center then cook w/o cover for twenty minutes or ’til top is browned. Add 1 qt water then cover. Cook it for approx 1 & 1/2 hrs (medium-done).
For the sauce: Have the vegetables strained from pan. Place drippings into thick pan then add tomato-paste & 1 qt water. Let it simmer slowly for fifteen minutes, skim grease off sauce top as needed.
