Pilav Kuzulu (Lamb Pilaf) Recipe
Ingredients:
2 chopped medium onions
2 cubed cooked lamb
Salt
4 Tbsps of oil
Blackpepper
3 peeled tomatoes; seeded & chopped
1/4 tsp of cinnamon
3 Tbsps of raisin
3 Tbsps of pignoli nuts
1 sliced greenpepper
1/4 c of chopped parsley
1 & 1/2 c of log-grain rice
3 c of beef stock
Instructions:
Prepare a 5-quart Dutch-oven. Have the oil heated then fry the onions ’til golden and soft. Add your lamb then brown evenly. Add cinnamon, pepper & salt. Add nuts, greenpepper, raisins & tomatoes. Simmer w/ cover for about 10 mins.
Add rice then fry it for two minutes. Add broth & parsley. Have it cooked over mid-heat ’til liquid is absorbed & rice appears to have tiny holes on its surface.
Transfer dish into pre-heated oven (350 degrees F) and cook for 30 mins. Best when serve w/ spoonfuls yogurt flavored w/ generous amount of garlic.
