Rack Of Lamb Recipe

Ingredients:

4 defrosted lamb-racks
1 Tbsp of chervil (fresh); minced
1/2 tsp of salt (coarse)
1 & 1/2 tsp of oilve-oil
1 Tbsp of coarsely crushed blackpepper
1/2 tsp of dried rosemary
1 clove garlic; minced
1/4 tsp of dried thyme

Instructions:

Pat meat dry then brush it w/ oil. You combine pepper, garlic, rosemary, chervil, thyme & salt. Rub mixture into meat. Place in covered container & refrigerate it for a minimum of 2 hrs. Set a shallow roast-pan in preheated overn (475 degrees F). Place the racks into pan w/ fat-side up then roast it for about 10 mins.

Reduce the heat into 375 degrees F & roast meat for 20 more mins or ’til temp reaches 130 degrees F. Transfer into chopping board, stand w/ foil cover for five minutes. You carve in between the ribs & serve.
