Tarragon Lamb Recipe
Ingredients:
1 tsp of tarragon
4 pounds lamb legs
1 Tbsp of oil
2/3 c of cream
Salt
1 sliced onion
1 & 1/4 c of dry wine (white)
Pepper
Instructions:
Remove skin & trim off excess lamb fats. Score its flesh w/ crisscross style then stuff slits w/ tarragon. You rub meat w/ oil then cover it w/ onion.
Transfer into marinating dish then pour wine over. Season w/ pepper & salt then marinate it for at least 2 hrs in cool area, baste occasionally.
Have lamb roasted in 325 degrees F oven for 10 mins, basting it w/ marinade frequently. Pour marinade & meat drippings into saucepan before end of cooking.
Reduce gravy into half of original volume. Thinly carve meat onto slices, add drippings into marinade.
Have meat arranged in heated serving platter. Remove gravy away heat then stir the cream in. Re-heat sauce carefully ’til it becomes slightly thickened. Pour this over lamb then keep it heated.
